Gà chay kho sả ớt – Chili lemongrass braised vegan “chicken”

I believe this is a Hue signature dish. It has a rich assortment of flavours including chili, pepper, salt and lemongrass and goes well atop steamed rice. Any time I cook this dish, it reminds me of the rainy season in Hue. I feel so at home by cooking and enjoying it. It makes me wonder if I really miss home or just the home foods. With this recipe, you’ll see that I add potatoes purely because I had them in the kitchen for a while and they needed to be used. Luckily, it turned out well.

Ingredients:

  • Vegan “chicken” chunks (It is sold as a 180gr-weight package)
  • 1 stem of lemongrass (I use the frozen one)
  • Fresh or dry chilies (if you don’t like spicy, you can use less (or no) spicy chili powder)
  • Black pepper
  • 2 average-sized potatoes
  • 1 stem of green onion (optional)
  • Soy sauce
  • Sugar

Directions:

  1. Mix 2 tbsp. of soy sauce, 5 tbsp. of water and 1 tsp. of sugar in a bowl, and add chili powder to taste. If you use fresh chili, you can crush it and drop it in later.
  2. Cut the potatoes into cubes and very finely chop the lemongrass
  3. Fry the potato cubes in a pan for about 5 minutes
  4. In the meantime, heat some oil in a deep small pot (I use a clay pot for any braised dish, but it’s optional), add the chopped lemongrass and fry it gently, just enough to bring out the lemongrass aroma.
  5. Drop the vegan “chicken” chunks into the lemongrass oil and stir fry them for a few seconds.
  6. After this, add the potato cubes and pour the sauce over everything.
  7. Loosely close the lid to let the steam release, bring it to boil with medium heat then switch to low heat and let it cook for about 10 minutes for the ingredients to absorb the sauce slowly
  8. Before serving, you can add black pepper and chopped green onion if you wish.
Lemongrass braised vegan chicken and kimchi
