Gỏi dưa leo – Crunchy cucumber salad

Just a simple cucumber salad recipe:

Ingredients:

Cucumber, green onion, garlic, soy sauce, sesame oil, roasted black sesame seeds and Korean paprika powder.
  • 1 cucumber
  • ½ small stem of green onion
  • ½ big glove of garlic (or 1 small-sized one)
  • 1 tsp. of paprika powder (I use Korean paprika powder) or chili powder (if you like spicy)
  • 2 tsp. of soy sauce
  • ¼ tsp. sugar
  • 2 tsp. of sesame oil
  • Roasted sesame seeds (optional)
  • 1 tsp. of salt

Directions:

Cucumber slices and 1 tsp. of salt
  1. First, cut a cucumber open and remove its centre part. Afterwards, cut it into slices; each slice is about 0.2cm thick.
  2. Mix all cucumber slices with 1 tsp. of salt, let it rest for 8 minutes and then squeeze out the water.
  3. In the meantime, chop a stem of green onion and mince the garlic.
  4. In a small bowl, mix 2 tsp. of soy sauce with ¼ tsp. of sugar
  5. In a big bowl, mix cucumber, chopped green onion, minced garlic and paprika powder and soy sauce all together.
  6. Before serving, add 2 tsp. of sesame oil and roasted sesame seeds.
